Lately I’ve been pulling a Semi-Homemade-Sandra-Lee with my salads by buying those Dole Kits and then customizing them with my own additions of red onions, tomatoes, marinated artichokes, peperoncinis, etc etc. Last night, though, I went back to my old-school ways and made our salad from scratch.
The best thing about a true, home made salad is the dressing. Good salad dressings are so easy to make and taste way better than the bottled stuff you find lining the grocery store shelves.
Here is a recipe for one of my favorites:
Lemon Parmesan Vinaigrette
2 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
1/2 small garlic clove, mashed to a paste
1/4 cup extra virgin olive oil
1 tablespoon finely shredded Parmesan cheese
Kosher salt & fresh ground pepper
Whisk together lemon juice, mustard and garlic. Slowly add the oil in a steady stream, whisking to emulsify. Stir in the cheese. Season with salt & pepper to taste. (Makes about 1/3 cup)
