I feel like such a cheat and liar when I make Jambalaya because I don’t make it from scratch. I get all Semi-Homemade Sandra Lee on it. I’m not going to let myself feel guilty about this, though because it tastes really good and its very quick and easy to make.
All you need is a box of Zatarain’s Jambalaya Rice Mix, a package of andouille sausage and some shrimp. You can leave out shrimp if you want. I also like to have some sort of veggie on the side and have found these packs of cajun seasoned veggie mixes in the frozen food section that have okra, yellow squash and tomatoes.
While the rice is cooking…. chop up and brown the sausage to bring out the flavors. When the rice is nearly done and almost ready for the fluff stage, stir in the sausage. Use the sausage pan to cook the shrimp. Toss the shrimp in blackening seasoning and then saute. Add to the rice. Serve with the veggies. Done. Or as Emeril would say: BAM! See how easy that was???
